Pizza for Breakfast?
Sunny side up egg. Cheesy pizza. Breakfast.
A bunch of seemingly* random words that combine to make great mornings possible. I prefer savoury foods over sweet, and this breakfast recipe checks all the other boxes for me! Here's a bunch of points to win you over:
Pros
You get all the food groups: dairy, veg, protein, grain.
1 plate + 1 knife = all the dishes you need
You don’t have to preheat the oven.
Melted cheese!
You can tell people you had pizza for breakfast.
Cons
If you hate pizza or sunny-side up eggs, this is sadly not the right recipe for you.
Still not convinced? You get a crispy, toasted tortilla base with comforting veggies and tangy tomato... all held together by stretchy cheese... runny egg yolk lacing each bite.
Ingredients
Must-haves
1 whole wheat tortilla or naan bread
1 tbsp tomato paste/sauce
2 tbsps low-fat cheese, shredded: mozzarella, cheddar, parmesan
1 egg
Black pepper, to taste
Italian herbs, dried or fresh: thyme, oregano, rosemary, cilantro, basil
Choose your toppings
Chopped greens: spinach, arugula/rocket, kale, Swiss chard
Sliced: tomatoes, mushrooms, sweet peppers
Instructions
Use an oven-safe plate or pan. Spread tomato paste/sauce on tortilla/naan.
Add all toppings except the cheese and egg, leaving a small space in the middle.
Crack the egg in the centre space. Season with herbs and spices.
Sprinkle cheese.
Turn the oven on to broil, bake for 5-10 minutes or until the egg whites have cooked through.
PS. I don’t add any salt because the tomato paste + cheese is usually salty enough for me. Also the herbs and spices give it tons of flavour already!
